Sara Moulton's Escarole Soup with Meatballs

This has been one of my favorite, comforting soups, which I have been making for many, many years. If you can't find escarole, arugula can be used as a substitute. It is worth making an effort to find escarole, if you can. It can usually be found at Whole Foods or Italian specialty markets.

This is a delicious soup that most everyone enjoys. Ground turkey is what I normally use to make the meatballs. The recipe can be found by clicking here.


NOTES


Drizzle olive oil on top of each serving along with adding the cheese. Our favorite is Sciabica's "buttery & sweet" California Olive Oil.


Sometimes, I add a 15.5 oz can or jar of cannellini beans, drained, to the recipe.
